A stump ground down to the surface still leaves the root system and lower trunk decaying underground, which sounds like a minor detail until that ground settles unevenly or the decaying wood starts attracting termites and carpenter ants near the yard.
Grinding well below grade clears space for new grass, a garden bed, or level ground where the stump used to be, instead of leaving a soft spot that reminds everyone a tree used to be there.
It's a step that takes more time and the right equipment to do properly, which is part of why we treat it as a standard part of a removal instead of a separate line item to skip.
